Pour cuire les cheveux d’ange à la vapeur, faire bouillir deux litres d’eau citronnée dans la marmite du couscoussier puis disposer les cheveux d’ange dans un plat et travailler avec l’huile. Les transférer dans la passoire du couscoussier et laisser cuire à feu moyen pendant environ 20 mn.
Retirer la passoire et remettre les cheveux d’ange dans le plat. Arroser d’un verre d’eau salée, mélanger bien et défaire les nouilles éventuelles à la main.
Disposer une deuxième Ibis clans la passoire et faire cuire à la vapeur. Refaire ceci jusqu’à cuisson complète des cheveux d’ange.
juste avant la dernière étape de cuisson, ajouter les raisins secs, préalablement nettoyés et rincés, aux cheveux d’ange pour les cuire aussi à la vapeur.
Avant la présentation, disposer les cheveux d’ange clans le plat, ajouter deux cuillères à soupe de beurre, laisser fondre et mélanger.
Servir dans un plat de présentation et décorer avec les amandes concassées, de la cannelle et du sucre glace.
